Canastra Cheese is made from the milk of cows that are born and live free in the field, feeding on natural pasture. It is made with raw milk, not pasteurized. After the rennet, it's time to add the pingo, a natural yeast made by the producers. It's like this: they take the whey that runs off the cheeses that are resting and use it as yeast in the next day's production. This contributes to each producer's cheese being different from one another, because each one uses its own drop. With the dough in the form, it's time for each producer to give their special touch to the cheese seasoning. They only use coarse salt and nothing else. The amount will make the difference. After salting, it's time to “thick” the cheese. In this part of the process, each piece is sanded from the outside to finish. To achieve the flavor, texture and color of the traditional Queijo da Canastra, each cheese must be left on the maturing board until it is cured. So he gains his identity. The secret in this part is to turn the cheese every day so that it cures evenly on both sides.
