Every Brazilian loves a barbecue. It is one of the favorite dishes for special celebrations or just a special meal on the weekend. From now on, any art lover can make an event with gourmet touches with the tips and recipes from the book “Churrasco Paixão Nacional”, authored by chef André Boccato. The work provides guidelines ranging from the organization, to tips on cutting the meat, choosing the garnishes, the drinks, in other words, everything that is necessary for this national passion to become a gathering of success.
In the chapter “The party will roll”, the book teaches all the ceremonial, such as the invitation, the preparation of the environment, utensils and also brings, an important section on the beverage service, with guidance from sommelier Carlos Cabral and the ideal harmonization of meats and wines. In “These barbecue grills and their incredible machines”, all the mysteries of the utensils needed to handle the barbecue, such as knives and skewers, are unveiled.
Numerous recipes are found in the chapters "Understanding the ox and its cuts", which provide explanations on the origin and preparation of each cut and recipes, from the simplest even unusual ones, such as Ribeye with yam and chestnut puree, Fraldinha with sago, Prime rib in a cashew nut crust, Picanha with moqueca sauce, among others; all cuts have recipe suggestions. Starter options, various types of rice, salads, farofas, side dishes, sauces and marinades, which could not be left out, are found in the chapter “News that add flavor”.
The book has 160 pages and, in addition to all the guidelines and tips, it also has a chapter with the History of barbecue, written by historian Ricardo Maranhão, and a glossary of terms relevant to art. […]
