A cookbook to be used in the kitchen and open up the horizons of those who love to cook. This is how chef and gastronomic consultant Luiz Cintra defines his book, “Um Chef sem Secrets”, which brings about 300 selected and tested recipes.
The book takes a tour of the professional history of Luiz, who was once the owner of renowned restaurants and one of the best known hosts of a gastronomy program on Brazilian television. In nearly twenty years of cooking, he gathered in the book curiosities, numerous researches, classic recipes from international cuisine, dishes he created and specialties from various parts of the world.
“A Chef Without Secrets” is different from most cookbooks you know. It doesn't have the beautiful photos and the luxurious binding that, according to Luiz Cintra, are great for decorating coffee tables. Nor is it restricted to teaching tasty dishes, which are almost impossible to be made at home. The author, on the contrary, is concerned with explaining everything step by step, giving all the tips, in a fluent and easy-to-understand language that does not intimidate even the most inexperienced cook.
“Nobody is born knowing how to cook, just as nobody is born a writer or painter. Cooking is part of a process of learning the technical fundamentals and encouragement and creativity. It is certainly possible to buy cookbooks and carry them out as taught, but nothing replaces training, intuition, and common sense. Therefore, trying, hitting and making mistakes is part of learning”, he says in his book.
In addition to the recipes, Luiz takes the opportunity to give a real cultural lesson, revealing the history of various dishes and gastronomic habits in Brazil and in the various countries where he traveled. The human and personal touch shows when he talks about family, friends and his memories.
The selection of recipes is, to say the least, curious. Alongside sophisticated dishes, there are recipes that many chefs would turn up their noses at, but that are part of from the gastronomic memory of any resident of a big city, such as pastel de fair and Chinese banana caramel. Luiz not only had the courage to decipher them, he also reveals secrets of professional cuisine, confirming his vast repertoire and experience.
