Much appreciated since 1832, when the master confectioner Franz Sacher developed the recipe in Austria, the pie is filled with apricot jam and has a special chocolate dough, the typical Sacher dough. The story goes that the recipe was created for a banquet given in 1832 by Prince Klemens Wenzel Lothar Metternich, maker of the Holy Alliance, a multinational organization set up to prevent any nationalist and liberal revolt in the Europe. In Vienna, the pie is known for the hotel that bears the same name.
