The pizza we eat today, round with tomato sauce and topped with cheese, originated in Naples, Italy, around the 18th century. But the oven-roasted disc-shaped dough with frosting is a much older creation. It all started 6,000 years ago with a thin layer of dough known as “Abraham's bread” or “piscea”, consumed by the Hebrews and Egyptians. Three centuries before Christ, the Phoenicians added meat and onion topping. The idea was taken up by the Turks, and during the Crusades in the 11th century, their thin, round bread reached the port of Naples. The Neapolitans improved the recipe with better quality wheat and new toppings such as cheese. Only later, in the 16th century, tomatoes, coming from America, were incorporated into pizza. But the worldwide popularization of the round took place even with the North Americans, at the end of World War II.
