At Harvard University, the American anthropologist Richard Wrangham conducts a lot of research on the peculiarities of the cooking habit.
These studies ended up being the book “On Fire: Why Cooking Made Us Human”. In it, Richard explains why the act of cooking food is so important to us that it sets us apart from other animals.
When we cook, the molecules that make up food are broken down by heat. This makes our body easier to digest and absorb food. Furthermore, the act of cooking eliminates bacteria that can make you sick.
Want an example? Salmonella is a bacterium that lodges in chickens and is harmful to humans. It can also be found in egg yolks. When we cook these foods, the heat from the fire kills the bacteria. _____________ it's so dangerous to eat raw eggs!
