temper your chocolate

  1. Pique some half bitter chocolate and separate 1/3 of this chocolate;
  2. Take a pan, pour water and let it boil. Then, turn off the heat and put the chocolate in a glass bowl so that it melts evenly and doesn't stop stirring (a process called “bain marie”);
  3. Preferably always check with a digital thermometer and remove from the pan as soon as the temperature reaches between 45°C and 50°C;
  4. Then take the rest of the reserved chocolate, add it and control the temperature;
  5. Keep stirring until all the chocolate has melted and the temperature drops to 30°C;
  6. And it's ready to put in the shape of an easter egg!

The ideal temperatures for each type of chocolate

White Chocolate

  • Cool: 27ºC

Milk chocolate

  • Cool: 28ºC

Semisweet chocolate

  • Cool: 29ºC

Filling

  • 400g of condensed milk;
  • 50g of half bitter chocolate;
  • 50g of milk chocolate;
  • 1 tbsp chocolate powder;
  • 1 spoon of butter;
  • Pieces of cookies and chocolate shavings to decorate.

Method of preparation

While the chocolate in the mold is refrigerated to receive the filling, prepare what you will want to put inside and how to decorate!

First, take the condensed milk with the chocolates, chocolate powder and butter to the fire.
Thus, stir until you reach the point of a brigadier at the spoon-eating point.
After it cools down, stuff the egg shells to a little more than half.
Then, to decorate, put some cookies and chocolate shavings of your choice to make it crunchy and tastier.

And it's ready to eat! You can still vary the fillings with the flavors you prefer!
