What does AM and PM mean used in watches?

The clocks we use today divide the day into two 12-hour cycles. This is because there are a total of 24 hours in a single day, which can be divided into two 12-hour periods.

It might be strange for some people, considering that when you look at the clocks, they display just enough time to account for one of two 12-hour periods.

To solve this problem, the two separate periods can be shown on the same analog clock using the AM and PM suffixes. Understand What does AM and PM mean?:

the acronym AM means "ante meridiem" or 'before midday' in Latin, so it is used to describe the first part of the day - the first 12 hours, starting at (00:00) and ending at 11:59.

On the other hand, PM means “post meridiem” or ‘after midday' in Latin and is used to describe the second part of the day - the final 12 hours, starting at (12:00) and ending at 23:59.

That's why time is labeled with the suffix AM or PM; so that we can identify which part of the day the time reference belongs to. Today, most of the world uses a 24-hour clock, while many English-speaking countries follow a 12-hour clock.
