Another edition of the program MasterChef came to an end, and the winning recipe was a perfect combination of mouth-watering dishes. Among them was a rice cake that surprised the judges with its complement of pumpkin foam, crispy cabbage and vinaigrette.
Competitor Ana Carolina managed to put together the starter dish with well-balanced flavors, mixing some foods that are already popular in brazilian cuisine.

While preparing the dish, the chefs and judges weren't supporting her idea, but the result was a string of impressive compliments. For Érick Jacquin, the participant managed to add sophistication to the simple dish.

Method of preparation
First, prepare the rice as usual. Then, steam the pumpkins or, if you prefer, use little water. It must be seasoned with garlic, onion, thyme, black pepper, bay leaves, cream and butter.
Then, use a blender to blend these ingredients and prepare the pumpkin foam. Strain well to form foam using the siphon.
Now, take the rice that is already ready and let it cool in the ultrasonic oven. Add the cheese, eggs, flour, chili pepper, parsley and coriander. Then, make balls with the rice and place them in a pan with hot oil.
The other complement to the dish must be made with very finely chopped cabbage. The vinaigrette must be prepared with tomato, onion, lemon and salt.
Finally, the champion chef indicates that the dish should be assembled with pumpkin foam at the base, rice cakes and fine cabbage on top with chili peppers as decoration.
