Although it is a longer process, making beans in a regular pot is an effective alternative, as well as for other dishes that would normally be cooked in a pressure cooker.
The first phase, regardless of the type of pan, is the same: plan the preparation of the beans in advance. Leave food, including different types of beans, soak for 12 to 24 hours.
Remember to change the water every 8 hours, as this helps to hydrate and soften the grains, reducing cooking time, in addition to eliminating phytate, an antinutrient that can cause discomfort gastric.
Now, when preparing beans in a regular pan, the trick is to make them even softer before cooking. Start by soaking the grains in boiling water for approximately 1 hour before putting them on the stove.
The next step is to cook the beans in the pan for 1 and a half to 2 hours, until they are tender. The time may vary depending on the variety and quality of the beans.
If you notice that the water is drying out during cooking, do not add cold water. Prepare a quantity of hot or boiling water separately to add as needed.
To add that finishing touch and give the beans the classic flavor, make a simple seasoning. In a frying pan, heat a drizzle of oil and sauté chopped onion and garlic, bay leaves, salt and black pepper.
Add this seasoning to the pan with the almost ready beans and voilà! Your delicious beans are ready to be served for lunch, proving that you don't need a pressure cooker to create a tasty and nutritious dish.
