The main objective of “blanching” foods is to preserve their texture and color. This is because, often, even after being removed from the heat, food still maintains a high internal temperature, which can continue to cook it and change its characteristics.

But what about pasta, should it be washed after cooking? Keep reading and find out!

The Truth About Washing Pasta After Cooking

When it's aboutnoodle, the answer is clear: no, we should not use the technique of washing the pasta after it is cooked.

There are much better methods to ensure that your pasta is at the right point, that is, “al dente”. Here are some key tips:

  1. Boiling water and suitable pan: make sure the water in which you will cook the pasta is boiling and use a saucepan large enough to accommodate the dough, allowing it room to expand while kitchen;
  2. Salt in water: adding salt to the cooking water is important, as it not only enhances the flavor of the pasta, but also prevents it from being unseasoned;
  3. Suitable cooking time: Follow the cooking time indicated on the pasta packaging. This may vary depending on the type and thickness of the dough, so it is important to follow the specific instructions;
  4. Drain the water: after the appropriate cooking time, drain the water from the pan, leaving only the pasta in it;
  5. Do not wash the pasta: Here's the crucial part. It is not necessary and in fact not advisable to wash the pasta with cold water after cooking. This removes starch from the surface of the pasta, which is key to helping the sauce adhere to the pasta effectively.
