Harvesting the flowers is a very important step and must be done carefully and at appropriate times. The best time is early in the morning, just after the evening dew has dried. But if the flowers appear to be in good condition, you can also pick them in the late afternoon, after the sun's heat has gone down. Do not pick the flowers in the middle of the day, as the heat can damage them, causing loss of flavor and color. The ideal is to use the flowers within a maximum period of 24 hours after harvesting.
