What is gluten?

Gluten is the protein part of cereals such as wheat, oats, rye, barley and malt. Its origin comes from the combination of two proteins, glutenin and gliadin. The word “gluten” has become part of our vocabulary, thanks to the notice “Contains gluten” on the packaging of bread and cookies. In fact, it serves to alert people who suffer from celiac disease, an intolerance of the body to this combination of proteins. When celiacs eat something with gluten, their small intestine becomes inflamed and cannot absorb the nutrients from the food.
