In the original recipe, originating in the Emilia-Romagna region, in Italy, the mortadella was made from pork, ground into a paste. Then, she received spices such as garlic, salt and pepper, in addition to cubes of pork fat. The ______ paste used to stuff the pig's viscera such as the bladder (clean and dry). In the recipe for mortadella that is marketed in Brazil, mixtures of beef and pork are used, in addition to seasoning. These meats are beaten and cut in a large blender. Then, it goes on to filling wraps made of cellulose or collagen (edible materials). The animal bladder is currently only used by a few artisan producers.
