Wheat allergy is the immune response triggered by the consumption of any of the proteins present in wheat. Symptoms usually appear immediately or within 2 hours of eating wheat. The allergic reaction is characterized, above all, by cutaneous symptoms, such as urticaria, gastrointestinal and respiratory manifestations or even anaphylaxis. Unlike celiac disease, people with wheat allergies can therefore consume barley and rye.
Currently, many health professionals and non-professionals have indiscriminately encouraged a gluten-free diet for healthy individuals without celiac disease or wheat allergy. Recently, the result of a Harvard University survey, which evaluated nearly 200,000 people by 30 years, found that individuals who followed the gluten-free diet had a 13% higher risk of developing diabetes type 2.
