Capsaicin is the chemical compound responsible for the “hot” sensation caused by chili peppers. It irritates the mucous membranes of the nose and tear ducts, causing a runny nose and tearing. The compound also has a dilating effect, which causes reddening of the face.
Capsaicin is insoluble in water. Therefore, the burning sensation is not relieved with the ingestion of liquid. Yogurt or milk, however, are able to slow down the effect of pepper. The reason is that they have a protein called casein, capable of absorbing capsaicin from pepper.
Although, as a spice, it comes in different colors and shapes, pepper comes from a single plant. The color depends on the degree of maturation of the pepper fruit.
Pepper is a plant native to India. There, peppers have been used in cooking for about 2000 years.
