Eggs, when young, have a slightly porous shell, very clean and without cracks. Check for residues that indicate the supplier's lack of hygiene and if they are stored in a well-ventilated, clean and cool place, away from heat sources. Egg cartons must not be reused or used for any other purpose. To find out if the egg is old, just put it in a bowl with water and salt. If it floats, it's old. Also, do not use the egg if the white or yolk sticks to the shell, if it has a different smell, rot or off-taste.
Refrigeration up to 10ºC for 14 days is recommended.
