The baião for two people is a traditional dish from Ceará. The word “baio”, which gave rise to the name of the dish, comes from a traditional dance, derived from a form of lundu known as “baiano”. The origins of the term were popularized by the song Baião de Dois, a collaboration between Ceará composer Humberto Teixeira and Pernambuco-born Luís Gonzaga.

Method of preparation
If you already have rice prepared at home, you can use it to prepare the vegan baião de dois. In this sense, the first step is to cook black-eyed peas in a very simple way. The point to remove from the pan is when it gets very soft, however, the grains need to be whole and not falling apart.
After that, you should put the olive oil, the diced zucchini and the carrot in a pan over medium heat until they are golden. Then add the seasonings, such as paprika, garlic, onion, leek, green smell and olive oil.
When they are golden, you should add the black-eyed peas with a little water, until the stew comes off the pan. When you reach that point, just add the tofu, carrots, zucchini, salt and rice. Keep stirring carefully, so as not to run the risk of tearing the vegetables apart, and finish with tomatoes and green smell.
