The most famous and well-known clay pots in Brazil are those from Espírito Santo, considered one of the icons of popular culture in Espírito Santo. In fact, since its origin – in the indigenous tribes that inhabited the coast of the State – until today, the technique of its manufacture and the social structure of the artisans have changed little. The capixaba moqueca, the salted grouper moqueca with plantain and the capixaba pie, three of the most traditional State cuisine dishes must be made in a clay pot or they do not have the same flavor, it is said unanimously.
