In Europe, chocolate spread among the royal family and the nobles of the Spanish court. To lessen its flavor, they reduced the amount of spice the Aztecs used and began adding honey. King Charles V, on the other hand, had the habit of drinking chocolate with sugar.
To guarantee the exclusivity of the recipe, the Spaniards entrusted the secret only to the monks. Thus, the kitchens of the monasteries became places of experience for the improvement of chocolate and the creation of new recipes. For nearly a century, Spain was unique in producing chocolate, which became a luxury item. While the nobles tasted it in the salons, the religious were allowed to consume it without it representing a break in the fast.
In the mid-17th century, however, the first information about chocolate began to leak. Monks allowed visitors from other countries to taste the drink, and sailors captured Spanish boats loaded with cocoa beans. Soon, cocoa plantations spread across Europe.
But it was only in the 19th century that chocolate became popular. In 1825, inventor Coenrad Van Houten created a press that allowed the separation of liquor from cocoa butter. With the liqueur, a better quality powdered chocolate was created and with the butter – guess what! – they made the first chocolate bar.
