CURIOSITY - Coffee should not be prepared with boiling water

Chemical studies indicate that the ideal temperature for preparing coffee is approximately 90°C. This means that the infusion must take place a few moments before boiling.

According to research, cold water does not extract essential oils and caffeine from grains. Already the boiling causes the loss of oxygen, changing the acidity index, which impairs the flavor and aroma of the drink.

Brazil is the leader in the world ranking of production and export, with an estimated coffee park of 2 million hectares, distributed in 15 states, with highlight to Minas Gerais and Espírito Santo.
