It is a green seed, of the legume family, usually sold dry. Its beans are small and flat. It needs to soak for a long time before being used. It has three varieties: brown, green and red. The first, also known as Egyptian lentils, cooks easily and is great to be served hot or cold, in salads, with rice or with sauce over pasta; the second resembles brown and can be eaten hot or cold; the third cooks quickly, becoming soft, with a creamy consistency. Very rich in protein, it can also be used in creams, soups, stews or cooked with rice. It is a grain used since antiquity and is still very popular today, mainly in Europe, the Middle East and India, for the preparation of creams and porridges.
