The Ministry of Agriculture, this week, seized 49 tons of raisins, which would go to the manufacture of Panettone. The raisins were contaminated by Ochratoxin A, a toxic substance derived from fungi.

A study carried out by the Federal University of Rio Grande demonstrated that Ochratoxin A is part of the mycotoxins, produced by filamentous fungi, which can occur in various parts of the food production chain foods. The effects can cause kidney damage, are carcinogenic and teratogenic, extremely harmful to the human body.
This Ochratoxin A can be found in several products, such as wine, beer, cereals, coffee, nuts, grapes, cocoa and many others. There is a maximum limit that the presence of such a substance is allowed, but in the current case it was found that the rate found in raisins was four times greater than this limit.
The hypotheses for this exaggerated rate of the substance are two: either the raisins were stored improperly, or the fungi contaminated the grapes even before harvest, due to the environmental conditions that boosted the development of fungi.
Fungi are even used in cooking, in the production of yeast and wine, for example. They are even useful in the pharmaceutical industry, in the preparation of some medicines. Meanwhile, if there are skin injuries or low immunity, fungi can cause illness and infections.
Fungi are part of Kingdom Fungi, acting as decomposers. They basically recycle organic matter up the food chain, which leads to decomposition. They are living beings that release their enzymes in the food, later absorbing the nutrients necessary for their own subsistence.
