This phrase refers to the moment when the sun goes down. At the moment, the star can be seen disappearing on the horizon. the expression is synonym of sunset, sunset and twilight.

The correct form is sunset.

The phrase “por-do-sol”, hyphenated, is no longer applied since the New Orthographic Agreement that came into force in January 2009.

New orthographic agreement

The New Orthographic Agreement defines that the hyphen should not be used in substantive, adjective, pronominal, adverbial, prepositional or conjunctional phrases.

There are some exceptions, such as some phrases consecrated by usage and with their own meanings.
