1. Cake with green banana

It is a delicious and healthy option that can be part of your weight loss goal. It is a source of nutritious ingredients and can be prepared simply. Here is the prescription:

Ingredients:

  • 3 eggs;
  • 1 cup of erythritol or demerara sugar (to sweeten);
  • 60g ghee butter;
  • 1/2 cup almond flour;
  • 1/2 cup amaranth flour;
  • 1 1/2 cup coconut milk;
  • 1/2 cup 70% cocoa;
  • 1/2 cup of oat bran;
  • 60g melted 70% chocolate;
  • 1 tablespoon of baking powder;
  • Vanilla essence.

Method of preparation:

  1. Start by beating the butter, eggs, erythritol (or demerara sugar) and vanilla essence for approximately five minutes in a blender until you obtain a homogeneous mixture;
  2. Add the 70% cocoa powder, melted chocolate and coconut milk and continue beating for a few more minutes;
  3. Then, add the flours (almond and amaranth) to the mixture and beat for a few more minutes until all the ingredients are well incorporated;
  4. Finally, add the baking powder and mix gently into the dough;
  5. As usual, pour the dough into a greased pan so the dough doesn't stick to the pan;
  6. Bake in a preheated oven at 180°C for approximately 30 to 40 minutes, or until the cake is firm and a toothpick inserted into the center comes out clean, without moisture;
  7. Wait for the cake to cool before unmolding and serving.

Filling:

  1. Start by melting 150g of 70% chocolate in a bain-marie or in the microwave, stirring every 30 seconds until it is completely melted and smooth;
  2. In a separate pan, dissolve 100g of green banana biomass. If necessary, you can add a little water to help dissolve the biomass;
  3. Combine this solution with the melted chocolate and mix well until you obtain a homogeneous mixture;
  4. If you prefer, you can also use 70% chocolate for the topping, melt it in the same way and pour it over the already baked cake.

2. Banana bread

Ingredients:

  • 3 ripe dwarf bananas;
  • 6 eggs;
  • 3 tablespoons of peanut butter;
  • 1 tablespoon of coconut oil;
  • 1 cup coconut flour;
  • 2 tablespoons of cake yeast.

Method of preparation:

  1. Start by preheating the oven;
  2. In the blender, add the ripe dwarf bananas, eggs, peanut butter and coconut oil;
  3. Blend all the ingredients in a blender until you obtain a homogeneous mixture, add the coconut flour and continue beating until it is well incorporated into the mixture;
  4. Lastly, add the cake yeast and mix briefly just to incorporate it into the dough;
  5. Pour the dough into a bread pan and, if desired, add small pieces of banana and 70% chocolate on top;
  6. Bake in the preheated oven at 180°C for approximately 35 minutes, or until a toothpick comes out clean, without moisture, when inserted into the center of the cake.
