1 – Palette muscle

The shoulder muscle, located in the upper part of the beef chest, is often cited as the least tasty cut by experts. The characteristic of being harder and containing a high concentration of nerves and fibers makes it less desirable for barbecues.

However, with proper preparation, shoulder muscle can become juicy, flavorful meat. One tip is to marinate the cut for at least 24 hours in a sauce with vinegar, garlic and onion. The vinegar helps tenderize it, while the garlic and onion add flavor.

Another option is to cook the shoulder muscle over low heat for a long period of time. This process also helps to soften and intensify its flavor.
