The typical dish of Brazilian culture is a mixture of indigenous, Asian and European cultures. Understand how the custom arose
Rice and beans are typically Brazilian – only Cuba has a similar dish, called moros and cristianos, which consists of black beans and rice cooked together. But the habit of combining the two beans separately isn't as old as it sounds. It is speculated that the dish became popular in the late 19th century, when rice gained space in Brazilian food, replacing corn and cassava flour. “In the North and Northeast, flour is still a very strong food base and competes with rice,” he says. Easy to produce and prepare, beans were already consumed in Brazil by the Indians with little broth and usually mixed with flour, pepper and meat. The rice we know, like Oryza-sativa, is from Asia and was brought by the Portuguese. Before that, there was another type, called water corn, but which was practically ignored by Brazilians. As until the 18th century it was not allowed to benefit from oriental rice (a process that involves washing and peeling), it was “papado”. “It was only in 1766 that a mill was established in Rio de Janeiro, with the permission of the Portuguese government, which did to make the rice looser”, says Ricardo Antonio Barbosa, professor of History of Gastronomy at the Senac-SP.
And who had the idea of mixing the two? Nobody knows. One of the hypotheses raised by Brazilian researcher Luís da Câmara Cascudo (1898-1986), in his book História da Alimentos no Brazil, is that rice and beans began to be consumed in 1808 with the arrival of Dom João 6º, who introduced rice to the ranch of the soldiers. Anyway, the mixture is a source of nutrients and even prevents cavities. In other words, a success in terms of nutrition and flavor.
