Why does passion fruit wrinkle when ripe?

“In contact with the environment, it loses water and wrinkles,” says agronomist João Scapare Filho, from the Luiz de Queiroz College of Agriculture, in Piracicaba, São Paulo. But this is not harmful. On the contrary: with the loss of liquid, the sugar becomes more concentrated. There are some other, less common circumstances that alter the appearance.

Passion fruit is a vegetable that needs to receive pollen from flowers from another foot. If it doesn't, it doesn't develop perfectly and wrinkles. Other times, the vegetable is hit by bugs that damage the passion fruit. But, in these two cases, the fruit rarely arrives at the market or the supermarket.
