Food preservation came with civilization. However, all processes used until the end of the 18th century were developed in a completely empirical way, without any knowledge or theoretical background and usually using or simulating processes existing in nature (drying, smoking, freezing). At that time, it was already known that fruits and some vegetables could be preserved in sugar and certain vegetables tolerated vinegar. However, all these procedures preserved the food for a short time and with little guarantees.
