Ironically, the inventor of cotton candy was a dentist. American from New Orleans, Josef Delarose Lascaux began producing the candy in the early 20th century. To this day, the technique for making cotton candy is the same: the sugar is heated until it becomes liquid (caramel). The machine then rotates, passing the syrup through very small holes. When in contact with air, the caramel immediately hardens, forming cotton candy strands. Adding coloring to the sugar at the beginning of the process provides the color variety.
