Cook makes delicacies from what was thrown away

Barks, stalks and leaves. Food can and should be enjoyed in full. This is what Regina Tchelly, 36, a cook, a former housemaid who created the Favela Orgânica project in the communities of Babilônia and Chapéu Mangueira, in the south of Rio de Janeiro, teaches.

Born in Paraíba, she grew up watching her mother take full advantage of everything that went into the kitchen. In Rio, from 2001, she revolted when faced with waste in open markets. She started to fill the bag with what was considered leftovers and unleashed her imagination to give new purposes to all that food. Thus emerged brigadeiros with banana skins, pumpkin skin bread, watercress stalk pastes. All delicious, inexpensive and of high nutritional value.

In 2011, Regina collected 140 reais and created Favela Orgânica. His disposition, talent and charisma made the project take off. She taught her neighbors, then the entire community, other favelas in Rio and, when she realized, she was giving workshops in other states and even in other countries.

Paraíba created about 500 dishes, all without any type of meat. The space created by her also offers an alternative gastronomy buffet for events and promotes training for food professionals. More than 30,000 people have already been trained.

In September, the cook premiered the show Amor de Cozinha, on Canal Futura. She wants to go much further. “Everything that is done with love works out”, he guarantees.
