In partnership with the Brazilian Institute for the Defense of Consumer (Idec), research by the Institute of Nutrition at the State University of Rio de Janeiro (UERJ) analyzed food labels on market shelves that contained additives. More than 9,000 foods and beverages were analyzed, finding flaws in the information contained in the nutritional table.
Additives are used when manufacturing ultra-processed foods and beverages. The nutritional and natural issue is not in focus, as the focus is on making the product last on the market until it is consumed.

Daniela Canella, associate professor in the Department of Applied Nutrition and the Graduate Program in Food at UERJ indicates that the consumer is ingesting combinations of additives without taking knowledge.
“The ultra-processed are industrial formulations made with little or no in natura or minimally processed food. They need the additives to make them palatable and to last on the shelves”, explained the researcher.
Ultra-processed foods appeared as a group of additives that were repeated in different food groups. Us foods and in beverages, one fifth of the survey does not have food additives and a quarter found more than six additives in the formula. Many of these items were inconsistent with what was in the packaging.
The survey pointed to flavorings as the one that most failed in the category of additives. The table did not indicate the correct amount, as many of the foods were outside what is allowed by law.
The law allows foods not to be detailed for flavorings, needing to use only three labels to identify: artificial, identical to natural and natural.
In contrast to what is permitted by law, many of the labels had the descriptions “aromas” or “flavourings”. That is, for researchers, the product may contain more substances than expected.
It is recommended to avoid consuming ultra-processed products and opt for foods in natura, without the addition of additives and preservatives.
