Creamy banana cake

Creamy cuca ingredients

  • 1 can of condensed milk;
  • 4 tablespoons of cornstarch;
  • 100 ml of milk;
  • Nutmeg to taste, grated;
  • 1 box of cream;
  • 6 bananas, cut into slices or lengthwise.

Preparation of the creamy cuca

  1. Preheat the oven to 180°C;

  2. In a pan, mix the condensed milk, cornstarch and milk. Stir well until the mixture becomes watery;

  3. Place the pan over medium heat and continue stirring constantly until the mixture begins to absorb. This should take a few minutes. When the mixture is thick, remove it from the heat;

  4. Add vanilla essence (or almond essence) and grated nutmeg to the mixture and stir to combine well;

  5. Now, frost the cream to the mixture and mix until everything is completely combined;

  6. In a refractory or shape measuring approximately 20×20 cm, place half of the cut bananas at the bottom;

  7. Remove half of the cream over the bananas;

  8. Repeat the process, adding the rest of the bananas and then the rest of the cream;

  9. Place the dish in the preheated oven and bake for around 25 to 30 minutes, or until the cuca is golden and bubbly.

Crispy farofa ingredients

  • 110g cold unsalted butter;
  • 1 cup (tea) demerara sugar
  • 2 cups (tea);

  • Nutmeg to taste;
  • 2 egg yolks.

Instructions

  1. Preheat the oven to 180°C. Grease a mold with butter and set aside;

  2. Cut the cold butter into cubes and set aside;

  3. In a large bowl, place the demerara sugar, wheat flour, chemical yeast, essence of vanilla or almond essence, salt and nutmeg (if using), but do not add the egg yolks yet;

  4. Mix the dry ingredients well with your hands, breaking up the cold butter and incorporating it into the mixture. Continue until the mixture has a coarse crumb texture;

  5. Add the egg yolks to the mixture and continue mixing with your fingertips until the dough is moist and begins to clump together into larger pieces, forming moist, crumbly crumbs;

  6. Transfer the farofa to the greased pan, spreading it evenly over the filling or base you are using in your recipe;

  7. Place in the preheated oven and bake for approximately 20-25 minutes or until the Crumble is golden and crispy;

  8. Remove from the oven and let cool before using to top your recipe.
