Refined, or regular, salt and coarse salt are the same substance (sodium chloride). The difference between them is in the treatment they receive after being extracted from nature. One of the processes they go through is slower in coarse salt. Therefore, it has crystals larger than common salt. When eating, the main difference is in the sensation that the larger or smaller pieces cause. Large ones seem to explode in the mouth when used on meat, for example.
