Where did the pastel come from?

The open market favorite probably originated in China and was later appropriated by the Japanese

Although it gained shape, texture and local ingredients (mozzarella, chicken and ground beef, for example), the pastel was introduced into our culture by immigrants from the Far East. Or that is the most accepted hypothesis. The exact origin of the recipe was not registered, nor was it much researched, according to the historian and specialist in gastronomy Ricardo Maranhão.

The idea is that the pastel would have originated from the chun juan, the spring roll. The Chinese dish is made with flour dough, a vegetable filling and roasted in a greased skillet. Around 1890, Chinese immigrants were already selling the rolls in Brazil, sometimes with fillings adapted to the local taste, such as ground beef. And simplifying the puff pastry to a single layer.

This pre-pastel was not yet popular. The rise came with the persecution of the Japanese in World War II. With shame and fear of being chased away, since Brazil was part of the Allies, the Japanese took advantage of the Western ignorance regarding the difference between their culture and that of the Chinese and camouflaged themselves in the habits of the others. Thus, they took over the task of preparing and selling pastries.

The Japanese community in Brazil was, at that time, much larger than the Chinese. This allowed the pastel to become popular. Pastries began to appear in São Paulo, and also the stalls at the fair, as many Japanese also they were marketers who sold the fruits, vegetables and vegetables they produced in the capital's green belt São Paulo. From São Paulo, the pastel would reach Rio de Janeiro, Belo Horizonte, and, finally, the entire country, with local variations. And so it stopped being an exotic specialty to gain the status of genuine Brazilian creation.
