Milk rises when it boils because it is not just a liquid that evaporates when it boils, but an organic composition that also ___________ fat, proteins, minerals and sugar (lactose).
On heating, before boiling, the fat and proteins rise to the surface, forming a film.
After that, the water present in the composition starts to bubble and these bubbles push the film outwards, causing the milk to foam.
When you turn off the fire, the overflowing process is stopped instantly because the proteins dissolve again in the milk water. Only the cream remains on the surface, that is, the fat.
