Enjoyed around the globe, these nutritious tubers originate in one place: South America – more precisely Peru.
Today, potatoes (Solanum tuberosum) are the fourth most planted food in the world – after rice, wheat and corn. Very nutritious, they are one of the richest sources of starch, vitamins, minerals and dietary fiber. They contain a very low amount of fat (only 0.1 g/100 g) and have no cholesterol.
The thousands of varieties of this vegetable are eaten boiled, fried, roasted and stewed. They are essential for the preparation of different gastronomic recipes, including typical dishes from different cultures.
But don't forget: there are tubers that we call potatoes and they belong to other species, such as sweet potato (Ipomoea potatoes) and sweet potato (Arracacia xanthorrhiza), both native to the Andes.
Despite being cultivated for more than 7 thousand years, potatoes only left South America in the 16th century, when they were taken by the Spanish to Europe. After conquering the Old World – where it quickly became an essential part of the diet – the potato spread across all continents.
