Scientists at renowned food company Del Monte have achieved a remarkable feat in the world of agriculture by developing a new variety ofpineapple which stands out for its reddish pink tone inside.
Named “Pinkglow”, this extraordinary fruit was cultivated over a period of 16 years, in Costa Rica, until it reached its peak of production. Today, it is a real success in the United States markets.

A distinctive feature that gives pineapple its special tone is the presence of an additional amount of lycopene, a carotenoid pigment that occurs naturally in the plant.
Interestingly, lycopene is also the substance responsible for giving fruits like watermelon and tomatoes their characteristic red color.

Opineapple development Pinkglow involved a long process of genetic engineering that began in 2005.
The key to this unique creation was the modification of the enzyme responsible for converting lycopene to beta-carotene in pineapple.
Traditionally, this enzyme transforms lycopene into beta-carotene, resulting in the characteristic yellow color of pineapple.
Del Monte managed to silence this enzyme using a technique called RNA interference. The technique prevents the cell from producing an enzyme, allowing lycopene to accumulate inside the fruit and giving the pineapple a unique reddish-pink hue.
To carry out this genetic change, a new gene was introduced into the pineapple using a bacteria that naturally transfers DNA into a host cell as part of its life cycle.
This complex and innovative process was discovered in the creation of Pinkglow, Del Monte's exclusive and patented pineapple variety. As a result, only the company has the right to cultivate and market this unique fruit. Del Monte also created a variety called “Honeyglow” with a golden interior.
These innovations in pineapple production brought commercial success to the company. In August this year, Del Monte revealed that demand for pink pineapple was outstripping supply.
Both Honeyglow and Pinkglow developed to an increase in gross profit over the previous quarter, demonstrating market interest in these unique varieties of pineapples.
